Summer is nearly here, and we’re getting ready for it with our delicious and super healthy kale salad. Your kids will love hunting for blueberries and strawberries in this tangy favorite, while you’ll enjoy the lightness of the dish. While this is technically a side dish, it is yummy enough to be the star of the meal. Throw some salmon or chicken on the grill to serve up with this colorful salad, which provides a mighty nutritional punch that the whole family is sure to enjoy.
Prep Time: 15 min
1 bunch of curly Kale, de-stalked and roughly chopped
1 cup blueberries
1 cup sliced strawberries
1 red pepper cut into thinly slice
1/2 cup of red onion, thinly sliced
1/2 cup sesame seeds
1/4 cup olive oil
4 tbsp red wine vinegar
2 tbsp Agave Nectar (honey can be substituted)
Salt and Pepper to taste
Thoroughly wash all produce. Cut the stems off the kale, and roughly chop. Next add the blueberries, sliced strawberries, red pepper, onion and sesame seeds in a large bowl. In a separate bowl, whisk the dressing ingredients and salt and pepper to taste. Pour the dressing over the salad and mix around thoroughly, making sure to coat all of the kale. Tip: Kale is a hearty vegetable, so this salad travels well for your warm weather picnics. Enjoy!
