Cribsters Cooks! Yummy Black Bean Veggie Burgers

Burgers are a big hit in most homes, and ours is no exception. But we want to feed our family (and ourselves) healthy wholesome meals, and save the real burgers for the backyard BBQ splurges. On weeknights, we love this quinoa black bean veggie burger recipe which is tasty and healthy. Serve it up with a side salad and enjoy!


Prep Time: 15 min; Cook Time: 20 min
Serves: 5

1 can (15 oz) black beans rinsed and drained
1/4 cup uncooked quinoa
1/2 cup water
1/2 cup breadcrumbs
1/2 minced red pepper
1/4 minced onion
1 large clove minced garlic
1 1/2 tsp ground cumin
1/2 tsp salt
1 egg

First make the quinoa by bringing 1/4 cup quinoa to a boil in 1/2 cup water. Reduce heat and cover, allowing the quinoa to simmer for 15-20 minutes until tender. In a large bowl, mash the black beans into a paste-like mixture. Add the cooked quinoa, breadcrumbs, bell pepper, onion, garlic, cumin, salt and egg, and work through mixture with your hands until well-combined. Form the mixture into 5 burger patties. Heat a couple of tablespoons of olive oil in a skillet over medium-high heat. Cook patties in skillet once oil is heated for approximately 3 minutes per side. Tip: for super delicious burgers, we like to whip up some guacamole to top the burgers for an extra southwestern kick.
