Fish is a great option for a weeknight meal because it is such a quick protein to cook. With its white, flaky goodness, our lemon sole is a classic go-to meal that the whole family loves. Serve up with some roasted potatoes and sautéed spinach for a delicious, healthy meal.

4 sole fillets (8-10 oz each)
1/4 cup flour
5 tbsp salted butter
1 lemon, sliced
2 tbsp capers
Put the flour on a plate and coat the sole in the flour. Be sure to shake any excess flour, and set the fillets aside. Melt 1 tbsp butter in a skillet over medium heat. Add the sliced lemon and cook until browned lightly (approx 2 min). Add the sole to the pan, cooking until the sole is white and flaky (approx 2 min each side). Add the capers and remaining butter to the pan and let it melt into a delicious butter sauce. Transfer to plate and enjoy!
